Glow Bowl: Hormone-Balancing Sweet Potato & Greens Bowl

Why It Works:

Ingredients (Serves 2)

  • 1 medium sweet potato, cubed
  • 1 cup broccoli florets
  • 1 handful kale or spinach
  • 1/2 avocado, sliced
  • 1/2 cup cooked chickpeas (or 2 soft-boiled eggs)
  • 1 tbsp olive oil
  • Salt, pepper, turmeric

For the Hormone-Glowing Tahini Dressing:

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tsp maple syrup or honey
  • 1 clove garlic, minced

Instructions

  1. Roast the Veggies
    Preheat oven to 200°C (400°F). Toss sweet potatoes and broccoli in olive oil, turmeric, salt, and pepper. Roast for 25–30 minutes until golden and tender.
  2. Sauté Greens
    Lightly sauté kale or spinach in a drizzle of olive oil for 2–3 minutes until wilted.
  3. Prepare Dressing
    Whisk all tahini dressing ingredients in a small bowl until smooth. Add water to reach pourable consistency.
  4. Assemble Your Glow Bowl
    In a bowl, layer:
    • Roasted sweet potato and broccoli
    • Sautéed greens
    • Chickpeas (or eggs)
    • Sliced avocado
    • Drizzle tahini dressing over the top
  5. Optional Glow Boost:
