Ingredients (Serves 2)
- 1 medium sweet potato, cubed
- 1 cup broccoli florets
- 1 handful kale or spinach
- 1/2 avocado, sliced

- 1 tbsp olive oil
- Salt, pepper, turmeric

Instructions

Preheat oven to 200°C (400°F). Toss sweet potatoes and broccoli in olive oil, turmeric, salt, and pepper. Roast for 25–30 minutes until golden and tender. - Sauté Greens
Lightly sauté kale or spinach in a drizzle of olive oil for 2–3 minutes until wilted. - Prepare Dressing
Whisk all tahini dressing ingredients in a small bowl until smooth. Add water to reach pourable consistency. - Assemble Your Glow Bowl
In a bowl, layer:- Roasted sweet potato and broccoli
- Sautéed greens
- Chickpeas (or eggs)
- Sliced avocado
- Drizzle tahini dressing over the top
